Levi Martin says it will bring a unique, healthy alternative to mid-Michigan residents.
Martin, the vice president and chief development officer of Inspired Concepts, LLC, has been at the forefront of operating some of Mt. Pleasant’s biggest restaurants, including Italian Oven, Bennigan’s, Big Apple Bagels and Ponderosa Steakhouse.
Come Aug. 30, the Mt. Pleasant-based investment group will unveil its latest restaurant — Noodles and Company.
The fast-casual restaurant will open at 4493 E. Bluegrass Road, next to Aspen Dental. Martin said the new restaurant fills a void in Mt. Pleasant.
Martin said construction is 45 days away and the building will open a couple of weeks before the opening for training purposes. He added the location is still in need of employees and hopes to bring 60 jobs to the community.

Noodles and Company is known for its international and American noodle dishes, as well as soups, salads and pasta. Most noodle dishes come vegetarian, but have optional protein topping such as tofu, chicken, beef or shrimp.
Noodles and Company also sells desserts. The restaurant opened in 1995 in Denver, Colo. and now has 410 locations across the United States.
Martin said the restaurant has a wide-variety menu for all ages.
“It will really bring a global flavor that has something for everyone, including kids,” Martin said. “From pad thai to Wisconsin macaroni and cheese to spaghetti and meatballs to Korean barbecue, it really has a little for everyone.”
The current closest Noodles and Company is in Midland, and they can also be found across Metro Detroit.
Construction is being completed by Mt. Pleasant-based Konwinski Constrction.
